cook time: 20 minutes serves:4 4 lb. mussels 1/4 cup olive oil 2 tablespoons unsalted butter, melted 3 cloves garlic, minced 1/4 chopped fresh parsley 2 tablespoons chopped fresh basil or (2 tsp. dry) 1 tablespoon chopped fresh oregano or (1 tsp. dry) 1 teaspoon Frank's Special seasoning 1 cup bread crumbs |
Clean & scrub mussels removing any beards. If you use cultured mussels they are debearded. Transfer mussels to a shallow baking pan. Combine oil and melted butter, and spoon over mussels. Mix together garlic, parsley, basil, and oregano and sprinkle over mussels. Combine Frank's Seasoning with bread crumbs and distribute evenly over mussels. Cover pan with foil and bake in a preheated oven at 375 degrees for 20 minutes. Transfer to warm plates and spoon on pan juices and serve with garlic bread. |
