Potato Chip Fish

potato chips
1/4 cup parmesan cheese
2 tablespoons butter, melted
4 ea. 8 oz fish portions of mahi mahi, halibut, red snapper, or grouper. Any of these fish will work well
Finely crush potato chips to equal 1/2 cup, mix parmesan cheese, and melted butter. Coat the fish fillets with mixture. Place into a baking pan. Cover top of fillets with any remaining chip/cheese mixture. Bake at 350 degrees for 20 minutes. Can be served over pasta or rice.
