Waterman's Seafood Chowder
Prepared by Maryland Department of Agriculture Seafood Marketing Program

1 lb. Maryland Rockfish Fillet, cut into cubes
1 lb. Maryland Crabmeat, fresh or pasteurized
1 pint Maryland oysters or 1 lb of scallops
3 slices of bacon
1/2 cup onion diced
2 stalks of celery diced
1 clove garlic
1 10oz. can Irish potatoes
1 8oz. jar of clam juice
1/2 cup white wine
1 quart water
14.5 oz chicken broth
2 Tbsp parsley
10 oz. can of Tomatoes
1 tbsp Frank's Seafood seasoning
1lb. bag of frozen corn
1 lb. bag of frozen carrots
salt and pepper to taste
In a large pot, cook bacon until crisp, set aside, drain grease. In same pot, saute onion, celery, and garlic ntil soft. Do not brown. Add remaining ingredients. Cook until vegetables are tender, add seafood. Simmer for 10 minutes and serve.
