Sword fish in OJ Honey Marinade
Serves 2. This blend of citrus and herbs gives swordfish a special flavor.

1 pound swordfish, cut one inch thick
ORANGE-HONEY MARINADE
-1/2 cup fresh orange juice
-3 tablespoons olive oil
-2 tablespoons honey
-1 tablespoon balsamic vinegar
-2 teaspoons grated orange rind
-1/2 teaspoon dried rosemary
-1 clove crushed garlic
-Pinch of allspice
-1/4 teaspoon ground ginger
-One bay leaf crumbled
-1/4 teaspoon salt
-Frsh ground black pepper to taste
Cut swordfish into 2 equal pieces and place in flat bottom glass dish. Combine marinade ingredients in glass bowl. Pour over swordfish and marinate 2 hours in refrigerator, turning twice. Grill or broil fish about 5 minutes per side, basting frequently with marinade. Heat extra marinade and serve along with swordfish.
