RED SNAPPER WITH TWO BUTTERS

Makes 4 servings


GARLIC-CASHEW BUTTER
8 tablespoons (1 stick) butter
1 small clove garlic, minced very fine
2 tablespoons chopped fresh parsley
½ cup finely chopped salted cashews
ROMANO OR PARMESAN CHEESE BUTTER
8 tablespoons (1 stick) butter
½ cup each: freshly grated Romano or
Parmesan cheese (do not use pre-grated
cheese) and finely chopped fresh parsley
FISH
Oil for lubricating fish and greasing grill
2 pounds red snapper fillets, cut into 4-
inch long pieces
4 large sprigs parsley or watercress with
stems for garnish
1. Make Garlic-Cashew Butter: Melt 8 tablespoons butter in a small saucepan. Stir in garlic, 2 tablespoons parsley, and chopped cashews. Transfer to serving bowl.
2. Make Romano Butter: Melt 8 tablespoons butter in a small saucepan over low heat. Stir in grated cheese and ½ cup parsley. Transfer to serving bowl.
3. Grill red snapper: Oil red snapper on both sides and place on prepared grill. Cook for just 3 minutes on each side or until fish has turned white.
4. Divide fish among 4 heated dinner plates, laying fish sections in center. Spoon a little Garlic- Cashew Butter on one side of fish; then spoon a little Romano Butter on other side. Garnish each serving with a parsley sprig. Serve immediately.
