Scallop Kabobs

Makes 4 servings


1½ pounds large dry pack scallops
8 ounces of apple wood smoked slab
bacon
1 large head broccoli florets
2 medium zucchini
2 medium squash
1 bunch spring onions
1 red pepper
Ground black pepper
1. Dry scallops in a paper towel and sprinkle with ground black pepper. Cut squash in ½ inch rings, place in a bowl. Cut the florets in half and add to squash; slice slab bacon in 1/8 inch thick slices and cut into 1½ inch squares. Set aside. Cut spring onions into 2-inch lengths and add to other vegetables.
2. Season the vegetables with salt and pepper and sprinkle on a little olive oil. Toss. Thread the skewers, 4 scallops per skewer; alternate with slice of bacon and add other vegetables, leaving 1 inch on either side of skewer. Broil or grill over a medium flame for 10 minutes.
