New England Clam Chowder
Serves 6
1 medium potato, cut up
1 slice bacon
1/2 stick butter
1 stalk celery, peeled and minced
1/2 medium onion, minced
1 pint clams, chopped
1 pint milk
1 pint half-and-half
Seasonings (1/8 tsp each):
- Dry mustard or mustard seeds
- Celery seed
- Thyme
- Parsley
Peel and boil 1 medium cut up potato till it cooks apart and looks like puree.
Meanwhile, Saute 1 piece bacon, 1/2 stick butter, 1 stalk peeled and minced celery, and 1/2 medium minced onion until bacon is rendered and vegetables are soft.
Add 1 pint chopped clams and simmer till cooked. Add potato puree.
Add 1 pint milk and 1 pint half-and-half. Simmer till just starts to bubble.
Add seasonings. Salt and pepper to taste.
Refrigerate overnight.
